Tomato and Coconut Pulav
Ingredients needed :
Tomatoes - 2,
Coconut Pieces - 20,
Onion - 1,
Green Chilli - 4,
Frozen Corn,
Cumin Seeds,
Cashews,
Bay Leaf - 2,
Ginger Garlic paste,
Rice - 2 Cups,
Water - 4 Cups,
Amul Butter - 2 tbsp,
Cardamom or Elachi,
Salt - 2 tbsp,
Red Chilli Powder - 3 tbsp,
Garam Masala - 1 1/2 tbsp.
Preparation:
Grind the tomatoes in a mixer into a thick fine paste, keep it aside,
Grind the coconut pieces in a mixer by adding some water into a puree, keep it aside,
Take a cooking pan, set it on a medium flame, add butter and cooking oil,
Add Ginger Garlic Paste,
Add cumin seeds,
Add cashews into the mix and stir them slowly in the pan,
Add Onions, green chili, frozen corn into the pan,
Stir them in order to pick up the heat,
Add tomato puree,
Add Coconut puree,
Add salt, red chili powder, and garam masala into the mix,
Add the rice,
Add the four cups of water,
Now close the lid for 7 minutes to get rice boiled and mix well with the tomato and coconut flavors,
Add some mint leaves on the top,
Serve the pulao into a serving bowl, along with spicy yogurt and garnish with onion, green chili, and cucumber slices.
